A fellow by the name of Jambe Davdar completed his own fan-made documentary of the original trilogy. The documentaries interweave various sources of commentary, behind-the-scenes/deleted/unedited/cut scenes and textual factoids into the actual run of each of the three movies. I watched the first 10 minutes of the ANH documentary, and it is fantastic! The documentaries are as follows with a link to the first 10 minutes of ANH (you can watch the others by clicking through the related videos after the jump).

ANH = Star Wars Begins (Part 1: http://www.youtube.com/watch?v=5iBJYWZkhTg)
ESB = Building Empire
ROTJ = Returning to Jedi
